Ingredients:
Serves 6
2 pounds sweet Italian sausage
2 green peppers
2 red peppers
4 tbls olive oil
1 bulb fennel
Salt to taste
Pepper to taste
Garlic 3 cloves
White wine 2 cups
2 tbls corn starch and 2 tbls water
Procedure:
In a sauté pan brown sausage in olive oil
Transfer sausage to a soup pot and cover with water and
gently simmer for 20 minutes
At the same time add peppers, onions, fennel and garlic with
salt and pepper to sauté pan and sauté until translucent adding olive oil if
needed.
Add white wine bring to a simmer and reduce volume by half,
about 5 minutes. Thicken with corn
starch if needed. Place sausage in warm
serving dish and place pepper mixture on top, serve.
