Giulianova Sauces

 

Marinara Sauce

 

Ingredients

2 Tbls Olive Oil

1 large onion

4 cloves garlic

2 28 oz cans whole tomatoes and juice hand crushed

1 bay leaf

1 bunch parsley

Pinch red pepper flakes

Salt and pepper

6 basil leaves, chiffonade

 

Procedure: SautŽ onion and garlic in oil till soft.  Add tomatoes and next four ingredients simmer 30-40 min.  Add basil and serve.

 

Vodka Sauce

 

Ingredients

1 batch of marinara sauce

1-cup vodka

½ cup grated Parmesan

½ cup heavy cream

 

Procedure: Heat marinara to a simmer, add vodka and Parmesan, and simmer 20 min until thick.  Finish with heavy cream.

 

Alfredo Sauce

 

Ingredients

1-pint heavy cream

½ cup grated Parmesan

1 stick butter

Ground pepper

Chopped fresh parsley

 

Procedure: Over med low heat, heat cream and gently wisk in butter.  Add cheese and black pepper.  Toss in favorite cooked pasta toss gently and finish with more cheese and fresh parsley.
