Red Potato Salad with Pancetta and Sour Cream Dressing

 

 

5 pounds red potatoes quartered

1 ½  cups sour cream

1 ½  cups mayo

1 red onion chopped

1 tbls fresh parsley chopped

1 pound pancetta diced and browned

 

Cover potatoes with cold water, bring to boil, and simmer for 10 minutes

drain potatoes and allow to completely cool

mix remaining ingredients and chill

toss dressing with potatoes, serve
