Old Bay Fettuccini w/ Jumbo lump Carbonara

 

Ingredients:

 

Serves 5

1 pound Old bay Fettuccini

˝ Pound Pancetta Diced

1 med onion diced

3 eggs

˝ C grated Parmesan Reggiano

 

 

Directions

 

Cook pasta per directions al dente.  Reserve 1 cup of pasta water

Sauté pancetta until brown, drain

Add onion to bacon drippings sauté till translucent

Drain pasta put in clean pot.  Add onion bacon and pasta water heat to simmer.

Remove from heat and add beaten eggs, crab meat and parmesan.

Put in warm serving dish garnish with fresh parsley and more parmesan.
