Lobster Corn Stock

 

Ingredients:

Shells from three lobsters

4 corn cobs

3 ribs of celery

2 tomatoes chopped

1 onion  chopped

1 carrot chopped

1 Fennel bulb stalks removed cut in half

1 head of garlic cut in half horizontally

1 tsp ground pepper

6 quarts of water

 

Procedure:

Add all above in large pot simmer gently for 3 hours until reduced by half.  Remove from heat and stain through a fine mesh strainer. Set liquid aside.
