Roasted Garlic and Parmesan Mashed Potatoes

 

Ingredients:

 

2 lb Baking Potatoes

1 stick unsalted butter (room temp)

¾ C heavy cream (room temp)

1 head of oven roasted garlic

Salt and black pepper to taste

1/2C grated parmesan

 

Directions:

 

Rub garlic in olive oil, rap in aluminum foil and back 375 for 1 hour, cool

Squeeze out cloves and mash

Peel and cube potatoes and boil gently for 15 min, drain

Add to mixing bowl and on low speed gradually add butter and cream and parmesan, Salt and pepper to taste.
