Garden Vegetables with White Balsamic vinaigrette

 

3 ripe Tomatoes

3 cucumbers

1 red onion

1 green pepper

1 red pepper

4 scallion

1 cup white balsamic vinegar

3 cup olive oil

1 tsp salt

½ tsp black pepper

1 tsp fresh thyme

1 tsp fresh basil

1 tsp fresh parsley

 

Slice scallion, peppers, cucumber, and onion, quarter tomato.

Create and emulsion with vinegar and oil

Wisk in remaining ingredients

marinate for 2 hours before serving.
