A full-fat hard cheese made from cow’s milk in various round or oval forms. It is often tied up lengthwise with strings and then hung in pairs, however, heavier cheeses are often produced. This rind is golden yellow while the solid lightly elastic body has a white to light yellow color and practically no holes. Each cheese bears a seal of quality in the form of a green, white and red label with an inscription that reads: Consorzio del Formaggio Tipico Provolone.
